Great Function

Had to cater for a function yesterday evening for 50 people. I went super smooth and my wife Kimmi was such a huge help to me. Everyone raved about the food which is the main thing, very happy customers, very happy organizer, lots of compliments. I utilized the KISS method.

Spaghetti Marinara with Meatballs
Fettuccine Chicken Alfredo
Garlic & Herb Bread
Chocolate Mousse with Fresh Strawberries and Blueberries.

I didn’t get to take any photos which I had hoped to do, was too busy making sure everything went smooth.

Making Chocolate Easter Eggs.

Setting in the mould. (Stage 1)

We have been on a real run-around this week trying to get the right stuff to make hollow chocolate Easter eggs. What an ordeal! We have found it really hard to find the right chocolate (courveture) and almost impossible to find the egg mould itself but we did. We went to a great shop D & G Occasions that had literaly thousands of chocolate and candy moulds but they only had ONE Easter egg mould, Yaaaaaaaaaaa for us.

The fist 2 attemps were a dissaster, as i think i over heated the chocolate, or the cocolate was old and bad. We did find some chocolate in the local store that had been out of date by two years. So we went to go buy a digital thermometer to take out the guesswork. It’s been such a long time since i’ve made chocolate eggs for my family. Found some nice Ghirradelli 65% cocoa butter bittersweet for my 3rd attempt, it’s setting as I type so i’ll let you know how it turns out….

I am feeling confident that this time it will turn out just great, some extra love went into it and special care and attention. Wow its already starting to set and peel away from the mould. Fingers crossed. Stay tuned!
