Banana Curd

Ingredients:

4 Bananas Large
125 gm Butter
½ Cup Sugar
1 lemon (Rind and juice of)
4 Eggs (beaten)

Method:

  • Cook chopped bananas in butter with the sugar, lemon juice and rind for 10 minutes.
  • Add 3 T of the mixture to the eggs and beat well.
  • Pour over remaining banana mixture while stirring.
  • Cook gently over low heat until thick.

Notes:

DO NOT BOIL.
